Micro Brewery of the Year (Fewer than 10,000 barrels): The Boon Brewery, run almost singlehandedly by Frank Boon since 1977, produces beers in an unmistakable house style. Significantly drier, with extremely focused and pure flavors, they come close to resembling fine Champagnes. Boon, unlike most, uses only whole fruits in his fruit beers and limtis their acidity to give greater purity of flavor and perfect balance. Led by fabulous Kriek and Gueuze beers, the entire portfolio is an expression of lambic beers at their finest.Frank Boon, who started as a blender, is considered by many to be the leading revivalist Lambic brewer in Belgium today. Boon is remarkable for making completely traditional products, and yet having the softest and most drinkable Lambics. They are tart and crisp, but with none of the acidic bitterness that some of the traditional brewers have made their mark of authenticity. Boon believes that Lambic does not have to be harsh to be genuine.His Lambics are 100% spontaneously fermented beer. 1997 Framboise  Deep pink, moderate carbonation, low head. Smells sweet, mild diacetyl and fruit. Light body, tart, sweet raspberry flavor, big wild yeast flavor, some diacetyl, some alcohol. Sweet finish. like Kriek, a fruit Lambic, but in place of cherries, fresh raspberries are put in the casks.

Marriage Parfait  Bright red, no head. Cherry aroma, vinegary odor. Intensely sour, medium body, some fruit flavor. Tastes like a mildly fruity Rodenbach Alexander.

Pertotale Faro  Red, clear, moderate carbonation, dense head. Banana and ginger aroma. Pretty sour, some cherry flavor, a little yeasty. Sweet and spicy. Faro, a mixture of top-fermented ale and Lambic, spiced with coriander and aromatic peppers and softened with the addition of candi sugar.
Kriek  Made by adding fresh cherries into the casks, leaving for 4-6 months to macerate, adding their color and flavor.
Gueuze  A mixture of old and young Lambic. The young Lambic is added to cause a refermentation in the bottle making for a delightfully sparkling and dry beer that has been likened,in all seriousness, to Champagne. Lambics are among the oldest beer styles in Belgium. These are the beers that are being raucously enjoyed in the paintings of Brueghel. Though still much sought after today, traditionally-made Lambics are very hard to find. Many brewers do not use 100% spontaneously fermented beer, preferring to save time, and money by adding top-fermented beer to small quantities of old Lambic. Other modern compromises include using fruit syrups and extracts instead of pure fruit to age in the casks. Many of these variations started as attempts to satisfy consumers, who Lambic brewers felt were losing their taste for tart beers (after years of drinking sodas). Today there are few traditional producers left indeed. Among the most respected is Frank Boon.

The Ertvelde brewery, where the "Bière du Boucanier" is brewed, was established in 1784 and is presently one of the most modern and important family breweries in Belgium.

GOLDEN ALE – Beer with a highly elevated alcohol content, unpasteurized with yeast in the bottle for refermentation.  The smell impressions are excellent, mainly fruity (pear) and floral (yeast and alcohol).  The beer's delicious and full taste makes for easy drinking with no unpleasant aftertaste, despite the high alcohol content.  We recommend drinking "Bière du Boucanier" from a balloon-shaped glass.  Serve chilled, but not too cold, approximately 10°C - 50°F.

All the beers are made with water from a well in the rocky subsoil, with malt, hops and spices. They are natural without added sugars and guaranteed to be without chemical additives.

ABBAYE DES ROCS (9% alcohol vol.) is a pure malt beer, with no added sugar. The entire range of tastes is directly linked to the double fermentation, the precise quantities of malts (7 types) as well as the mixtures of three kinds of hops (Belgian, German and Czech). Its colour is a striking deep and majestic red. Its taste is rich and full of subtlety. It is tasted like a red wine with which it shares the ruby colour without having the tannin. It develops a strong sweet smell. It confirms the initial impression in the first mouthful, with a sharp body that is balanced with a certain fruitiness. It frees itself on the palate and develops an impressive depth of taste. Some traces of burnt wood are detectable, but never scorched even if it contains this kind of malt. The foretaste is very prolonged because of its rich and unctuous development throughout the mouth. The bitter and sugar tendencies (even though there is no sugar in its composition) compete and come back together to the taster's great satisfaction. It is a deep, mystic and extremely mature beer to be classed among the great products of our soil.

Scotch de Silly  Top fermentation beer, Belgian Scotch style. Color: dark ruby, 7.5% ABV, Malt, malt caramel, hops of Kent. Smooth taste, light bitterness of the English hops, long conservation in normal condition. Container: 25 cl bottle (crown cork)75 cl and 1.5 L bottle (champagne cork). Scaldis/Bush Beer  Having been brewed since 1933 this powerful beer has a good pedigree. It was known as Bush Beer intil the summer of 1998 (the 65th anniversary of the beer) when the name was changed to Bush Amber and the Blonde was added to the range. Unlike the 7% it is malt rather than hops that shape the taste but pure heat and alcohol that dominate it. Behind the alcohol it is pleasantly fruity. For a beer of this character it has a surprisingly light texture. 12% ABV.

Scaldis Noel/Bush Noel, as its name suggests, is the Christmas beer which first appeared in 1991. The palate again portrays the intense, burning alcohol that epitomises Dubuisson beers but this beer has fuller taste and body that the Bush 12%, with some candied, caramel malt tastes. Apparently it is the same recipe as the Bush 12% but with a higher proportion of Caramunich malt in the recipe. Brown opaque, thick head. Malty, alcoholic aroma. Thick, sweet, nutty, lots of alcohol. Chocolate finish.

The Brasserie Ellezelloise (pronounced “EL-ZEL-WOZ”), is located in the town of Ellezelles in the gentle “hill country” of Belgium. Founded in 1993, the tiny brewery manages to produce 1000 hectoliters per year - the most of any brewery of the Belgian Artisanal Brewers Guild. Housed in a picturesque converted barn in French-speaking Belgium, the brewery includes a cozy café to which the local folk and connoisseurs from Brussels love to repair on weekend afternoons. There you can enjoy a wonderful Ellezelloise brew, served by the brewer, Philippe Gerard.Ellezelloise produces five regular beers, a blond and an amber ale, and a hardy Belgian stout. All of them are made in small batches and are lagered for ten days in German oak casks. They are strong, full-bodied, and very satisfying. The Quintine Amber and Blond are named for a witch of local legend. And Agatha Christie’s Detective Hercule Poirrot (probably Belgium’s best-known citizen, and a native son of Ellezelles) is the namesake for the “Hercule” Stout. It is the only distinctively Belgian stout, and every bit as sturdy and dapper as its namesake.

Monk Brown Ale  Abbey Brown Ale, known in Belgium simply as “Pater” was described by Michael Jackson as “A strong, Burgundy-colored ale in the style of the classic Trappist brews of Belgium. Has a very distinctive bouquet: yeasty, fruity and slightly smoky. In palate, it has notes of port, raisins and black chocolate. Matures greatly with age, becoming softer, smoother and deeper in palate. Ideally, should be stored for at least a year, and could mature for at least five. Original gravity - 1064; international bitterness units - 24; 5.8% abw; 7.5% abv; shelf life - up to five years at 55-60°F.

Monk Pale Ale  Abbey Pale Ale, known in Belgium as “Agnus” was described by Michael Jackson as “Dry, with a great deal of finesse. A deceptively potent ale in the golden, “Triple” strength of Belgium’s Trappist monks. It has a very big head indeed - pour it gently - and a very clean palate, beginning with a dry, lightly citric fruitiness, and finishing with a distinctive and delicate, perfumy, hop character. Very light and fluffy in texture, giving little hint of its strength. This beer has living yeast in the bottle, and will evolve with age, becoming softer and cleaner.”

Corsendonk® Abbey Pale Ale will mature in bottle up to three years, becoming drier and developing a Brut Champagne-like character. Store at cellar temperature and serve lightly chilled—about 50°F—and enjoy it as an aperitif and with a wide variety of dishes. Duvel is a high fermentation beer that is still brewed today based on the craftsmanship of yesteryear. Duvel is made using the finest barley malt and hops, with no additives or preservatives. Blanche de BrugesThe term "white" has traditionally been applied to wheat beers. They are very pale in colour and may, to varying degrees, have an intentional natural cloudiness. Brugs white beer is made with top-fermenting yeasts, with an alcohol content 5 % by volume. This typical white beer is made of a particular blend of pure wheat, hops, orange peel and coriander, which give it a unique refreshing taste. Because Brugs is not filtered and is refermented in the bottle, its natural cloudiness is preserved. Belgian White beers are very traditional brews, at one stage threatened with extinction, but now enjoying a huge revival in popularity, especially among young people.

In 1152, Henry the Blind, Earl of Namur, gave the Church of Leffe to the Premonstratensian Order of Floreffe. The monastery that developed as a result became an abbey in 1200. It has survived its fair share of disasters over the years, having been reconstructed in the 17th and 18th centuries, and plundered by French revolutionaries in 1794. The present buildings were sold in 1816 and transformed into workshops, but in 1903 were purchased by the exiled French Premonstratensian Order and restored as an abbey.

Leffe Dark
 Abbey of Leffe dark beer is a highly fermented beer to be savoured. The ingredients are, roasted malt, corn, water, hops and yeast which gives it its a deep autumnal brown colour. Its alcohol content is 6.5 %, its ideal temperature 5° to 6 °c. As a bottled beer, it is to be savoured with pleasure, as a draft beer it is thirst quenching. The taste may be defined as follows: the aroma, a hint of ripe apple. The sensation of a medium to full ale taste in the mouth; at normal cellar temperature, the taste develops from a pleasing sweet-fruity to brown sugar (with a hint of caramel and butter candy) to an aftertaste that is spicy and dry.
 
Leffe Blonde
 Abbey of Leffe blonde beer is a highly fermented beer to be savoured. The ingredients are light malt, corn, water, hops and yeast, which give it a bright golden colour with dazzling reflections. The alcohol content is 6.6 %, the ideal serving temperature 5° to 6 °C. As a bottled beer, it is to be savoured with pleasure, as a draft beer it is thirst quenching. The taste is full, sweet and fruity (with a hint of bitter orange), and the after-taste is powerful and surprising.
 
Leffe Triple
 Abbey of Leffe Triple is a beer to be savoured, highly fermented and refermented in the bottle. The ingredients are malt, corn, water, hops and the yeast which give it its golden brown colour. The alcohol content is 7 % when bottled, and reaches 8.4 % after refermentation in the bottle. The taste of Leffe Triple is a rich bouquet with a fresh hint of lemon; medium to full in the mouth, fruity and full, with a deliciously aromatic after-taste.
 
Leffe Radieuse
 Abbey of Leffe Radieuse is a highly fermented beer to be savoured. The ingredients are dark malt, corn, water, hops and spices (coriander, among others) and yeast which give it a bronze colour. The alcohol content is 8.2 %, the ideal serving temperature is 5° to 6 °C and the service ritual is that of bottled beers to be savoured. Leffe Radieuse has the taste of a rich and earthy bouquet with a creamy head. The taste is powerful where the fruity, the sweet, a hint of roasting and the dryness of the hops are apparent. The after-taste is long and warm. It is a very complex beer, that is to say, a beer for Epicureans!

 Abbey beer Leffe 9° is a high fermentation beer with a deep golden colour and an alcohol content of 9%. Its wholesome taste and its rich flavour make it a beer full of character. Leffe 9° will be your ideal companion for a time of authentic beer tasting.

Framboise  Purple, low head. Lots of raspberry aroma. Extremely sweet, intense sticky raspberry flavor. Red-brown opaque, fizzy, OK head. Big raspberry aroma, with hops detectable up close. Tart-sweet fruit, touch of alcohol. Sweet-sour finish...good beer with Chinese food.

Gueuze  Amber, translucent, a few yeasty bits floating around. No head at all. Smells very much like an old barn! Sour, fairly sweet. Very "Belgian"...whatever that means. Very light body. Virtually no carbonation. Some bitterness in finish, along with a grapefruit-like fruitiness.

Kriek  Deep purple-red, lots of carbonation, low head. Lots of cherry aroma, some phenolics. Medium body, sweet, big cherry flavor, a little woody. Red, clear, low carbonation, good head. Smells like Smith Brothers cough drops...a good thing. Cherry-sweet. Sweet. Cherry. Hint of sour in finish, but sweet. A real Technicolor beer, if you'd drink too much.

Peche  Golden, high carbonation, pinkish head. Peach aroma on top of the standard "Belgian" nose. Good body, very sweet, quite tart.

Alexander Rodenbach  Deep red, thick head. Lots of black cherry aroma. Sweet cherry flavor, then sour cherries, then a drying finish. Not nearly as acidic as Grand Cru, but still pretty tart.

Grand Cru  Deep red-brown, good head. Sour, banana aroma. Very sour, lots of cherry with some chocolate in the background. Very astringent. Pretty refreshing, although the acidity might keep me from drinking more than a few.

RODENBACH, Rodenbach GRAND CRU and ALEXANDER Rodenbach are three extra-fermented beers. Served at 8( to 12°C they are the most refreshing beers in the world! That is the opinion of famous beer connoisseur Michael Jackson. RODENBACH is fresh, slightly sharp-tasting and has a beautiful reddish-brown colour. With an alcohol content of 5% vol., Rodenbach has approximately the same strength as traditional pilsener lager (5% vol. to 5.2% vol.). Rodenbach GRAND CRU beer, which has matured for at least two years in oak casks, surprises many people with its spicy, sharp taste. ALEXANDER Rodenbach is a luxury cherry beer: you will certainly find its fruity bouquet and sweet and sour taste tempting!

Bornem Dubble Abbey Ale  8% abv. Very dark, coffee color - full rich body - staying head - effervescent nose - soft velvet feeling in the mouth - luscious.  Malt character with a hoppy aftertouch. Monks used to fast on this type of beer for 40 days!

Bornem Triple Abbey Ale  9% abv. Golden shining and solf feeling in the mouth - perfectly balanced taste - full body and heart warming, a splendid aroma, tickling in the nose - hoppy dry long finish.  Ageable for many years.

Piraat Ale 10.5% abv. Deep golden with a subtle haze. Lots of hops and malt. Mild sweetness.  Reminiscent of bread dough, spices and tropical fruits.

Gulden Draak 10.5% abv. Dark brown triple ale, which makes it an exception among the Belgian Triples. The second fermentation offers the nice creamy head, the full body and all the vitamins of the centuries old brewers yearst. It is a "thick" beer that you can actually "eat" to adventure the complex taste. Gulden Draak balances a natural malt toffee-like sweetness with a mellow happiness and some hoppy accents. The aroma is round, sweet and reveals the 10.5 alcohol by volume. Another name for this type of rich beer is "Barley Wine"

WITKAP PATER

Banana, berry nose, lemony finish. Lighter body & ABV than Dobbels or Tripels, but aromatic profile typical of style.  Good with mussels, salmon, tuna, and swordfish.  What the monks drink for lunch!  6% pale ale.  An excellent abbey beer choice as the waether begins to warm.
